Italian Farro Salad with Creamy Balsamic Dressing

Salad
- ~2.5 cups cooked farro from about 1 cup dry farro
- 1 can white beans - drained
- ½-3/4 cup shredded parmesan cheese i recommend shredding from a block
- ½ cup finely chopped basil
- 3 cups chopped cherry/small tomatoes from about 1 clamshell
- ¾ cup chopped pistachios
- 1 cucumber - diced
Dressing
- ⅓ cup olive oil
- ¼ cup balsamic
- 1 clove garlic - grated or minced
- 1 teaspoon mustard
- pinch sea salt
- black pepper to taste
- 1 ½ tablespoons tahini make sure it is drippy
Add all salad ingredients to a bowl.
Add dressing ingredients to a bowl or jar and mix until smooth.
Toss together dressing with salad. Serve and enjoy.
