Italian Farro Salad with Creamy Balsamic Dressing

This Italian Farro Salad with Creamy Balsamic Dressing is a delicious healthy salad recipe.

Ingredients
  

Salad

  • ~2.5 cups cooked farro from about 1 cup dry farro
  • 1 can white beans - drained
  • ½-3/4 cup shredded parmesan cheese i recommend shredding from a block
  • ½ cup finely chopped basil
  • 3 cups chopped cherry/small tomatoes from about 1 clamshell
  • ¾ cup chopped pistachios
  • 1 cucumber - diced

Dressing

  • cup olive oil
  • ¼ cup balsamic
  • 1 clove garlic - grated or minced
  • 1 teaspoon mustard
  • pinch sea salt
  • black pepper to taste
  • 1 ½ tablespoons tahini make sure it is drippy

Instructions
 

  • Add all salad ingredients to a bowl.
  • Add dressing ingredients to a bowl or jar and mix until smooth.
  • Toss together dressing with salad. Serve and enjoy.
