Ingredients
- sesame oil
- asparagus
- cashews
- jalapeno
- cilantro
- rice vinegar
- miso
- ginger
- garlic
- lime

Substitutions
- Cilantro - this can be subbed with basil, parsley or mint.
- Sesame oil - if you are allergic to sesame use regular oil.
- Miso paste - soy sauce can be subbed here.

Mix together dressing.

Crunchy Asian Asparagus Salad
Ingredients
Salad
- 1 tablespoon sesame oil
- 2 bunches asparagus - heads cut off and then finely sliced *
- 1 cup cashews - roughly chopped
- ½ jalapeno - finely chopped
- ½ cup cilantro - finely chopped
- salt/pepper to taste
Dressing
- ⅓ cup toasted sesame oil**
- 2 tablespoons rice vinegar
- 1 tablespoon miso
- ½ teaspoon grated ginger
- 1 clove garlic - grated
- juice from 1 lime
- salt/pepper to taste I did not add any additional salt to the dressing but adjust to your preference.
Instructions
- Heat sesame oil in a large skillet over medium heat. Add asparagus and cook for 2-3 minutes. You want to just lightly cook the asparagus but leave it still crunchy.
- Add all of your dressing ingredients to a bowl and whisk together until smooth.
- Add all salad ingredients to a bowl. Pour over dressing and toss to combine. Taste and add additional salt and pepper if desired.
