Homemade Salted Pistachio Butter - the spread of your dreams. I refuse to spend upwards of $20 on a tiny jar of butter so this recipe was born. This recipe is simple to make with the most time consuming part being blending the pistachios. This butter also has no added sugar or dairy unlike many pistachio butter on the market.

You can store this pistachio butter in a sealed jar in your fridge for up to a month or out of the fridge for up to 1 week.
Recipe Pro-Tips
A good quality food processor is key to blend the pistachios into butter. I recommend this cuisinart food processor. I do not recommend using a blender as it will be much harder to emulsify the pistachios into butter.
I like this brand of raw pistachios. They are fresh, flavorful and easy to blend. They also yield a beautiful green color.

It depends what kind of yogurt you use. If you use dairy free yogurt then these would be vegan.
Pistachio cream is typically used in desserts like croissant and has added powdered sugar and dairy. Pistachio butter is typically less sweet and does not have cream.

Homemade Salted Pistachio Butter
Equipment
Ingredients
- 3 cups raw and unsalted pistachios
- 1-4 teaspoons coconut oil or olive oil
- pinch of salt
Instructions
- Preheat oven to 350 degrees.
- Add pistachios to a sheet pan lined with parchment paper or silicone. Bake for 8-10 minutes, stirring once halfway.
- Let pistachios cool for 10 minutes so they are still warm but no longer hot.
- Add pistachios to a food processor with salt and 1 teaspoon of the oil. Blend until the mixture is completely smooth and creamy, scraping down the sides as needed and adding more oil as you go and as needed. I added 4 teaspoons total throughout blending. The oil serves to make the blending process easier.The pistachios will first form flour-like clumps, then gather into a ball against the side of the food processor, and eventually turn creamy and glossy. If the mixture becomes too warm or your machine starts to struggle, pause and allow it to cool for a few minutes before continuing.This whole process took me about 15 minutes and I stopped to scrape down the blender about 4 times, adding in more oil each time.
- Taste and blend in more salt if desired. Store in a jar/container in your fridge for up to a month or 7 days out of the fridge.
