Broccoli seems to be the type of vegetable that you either love or hate. Personally, it is one of my favorite vegetables but I do think it is often cooked poorly. However, this Bang Bang Broccoli (vegan) is perfect even if you don't like broccoli. It gets crisped up in the oven and emulsified with a tasty sauce.

This bang bang broccoli is shockingly good. It's also vegan and gluten and has the option to be made nut free if you swap out the cashew butter for tahini. I used chickpea flour to add some extra protein to this recipe and it made for a very satisfying meal. This bang bang broccoli goes great with rice but I could also see it tasting good in a salad or even as a side to tofu!
Although this recipe does require a few steps, it is so worth it. The double baking portion really crisps up the broccoli and locks in flavor.

- broccoli
- plant milk
- chickpea flour
- arrowroot flour or cornstarch

- apple cider vinegar

This bang bang broccoli (vegan) is a delicious way to enjoy broccoli.

Ingredients
- 1-2 heads broccoli - cut into florets
Batter
- 1 cup plant milk
- ¾ cup chickpea flour (all purpose would probably work as a sub)
- ¼ cup arrowroot flour/starch or cornstarch
- ½ tsp salt
- black pepper to taste
- 1 tsp apple cider vinegar
Bang Bang Sauce
- ½ cup cashew butter or tahini if sensitive to nuts
- 1 tsp lemon juice
- 1 tbsp apple cider vinegar
- pinch pepper
- ¼ tsp garlic powder
- ½ tsp salt
- black pepper to taste
- ½ cup water
- 2 tbsp sriracha
- 1 tbsp maple syrup
Instructions
- Preheat oven to 400 degrees. Mix together your batter ingredients until a thick paste forms. Dip broccoli florets in batter and place on a sheet pan. Roast for 20 minutes.
- While broccoli is roasting mix together your bang bang sauce until smooth. At the end of the 20 minutes remove broccoli from oven. Carefully dip broccoli florets into bang bang sauce and and bake for 10-15 more minutes or until crisp.
- Let cool and serve broccoli with desired sides.
