High Protein Pistachio Silken Tofu Pudding

Ingredients
- ½ cup coconut cream from refrigerated canned coconut milk or coconut cream*
- ½ cup pistachios soak them in hot water for 30 minutes so they are soft and blendable
- ¼ cup coconut sugar
- 1 block silken tofu - drained
- ½ teaspoon vanilla extract
- pinch salt
Instructions
- Add all ingredients to a blender and blend until smooth.
- Divide out pudding into jars, glasses or your favorite vessel. Refrigerate for 30 minutes - 1 hour.
- Top pudding with your favorite toppings and enjoy.
