High protein asparagus soup with cottage cheese
Ingredients
- 1 bunch asparagus
- ½ onion finely chopped
- 3 cloves garlic - minced
- ¼ cup fresh chopped parsley
- 1 parmesan rind*
- 4 cups vegetable broth can sub any broth you like
- juice from ½ lemon
- pinch salt/pepper
- ¾ cup cottage cheese
Instructions
- Heat oil in a soup pot over medium heat. Add onions and cook for 5 minutes. Add garlic and cook for another 5 minutes.
- Add all remaining ingredients to the pot except for the cottage cheese. Simmer for 15-20 minutes, until all the veggies are soft and tender.
- Remove the parmesan rind from the soup. Add soup to a blender along with cottage cheese and blend until smooth. Alternatively you can blend with an immersion blender.
- Serve and enjoy.
