Ingredients
- butternut squash
- parmesan
- garlic
- thyme
- salt
- pepper
- paprika
- olive oil

Substitutions
- parmesan - feel free to use a dairy free parmesan if desired. Corn starch also works.
- truffle oil - this can be left out if you don't like truffle.
- basil - sub in your favorite herb here.
Step-by-Step Instructions
Toss together squash with parmesan and other ingredients.
Add fries to sheet pan and bake.
Serve with truffle oil and basil and enjoy!
Storage instructions
You can store the extra carrots in your fridge for up to 2 days. Keep in mind that they will lose their crisp. To reheat you can pop them back in the oven for a few minutes.

Use a good quality olive oil for the best tasting dressing. This is my favorite olive oil.
Not all parmesan is vegetarian so if that is important to you be sure to make sure it is not made with rennet!

Garlic Parmesan Butternut Squash Fries
Ingredients
- 1 medium butternut squash - cut into fries
- ⅓ cup fresh grated parmesan
- 5 cloves garlic - minced or pressed
- 3 tablespoons avocado oil or olive oil
- ¼-1/2 teaspoon salt adjust to your saltiness preference
- black pepper to taste
- ½ teaspoon dried thyme
- ½ teaspoon paprika
Optional toppings
- 2 tablespoons fresh chopped basil or herb of choice.
Instructions
- Preheat oven to 425 degrees.
- Add butternut squash to a large bowl. Toss with all ingredients until fries are evenly coated.
- Add fries to a sheet pan lined with parchment paper. Bake for 30-40 minutes, until fries are crisp. For best results, flip once halfway through. If you are lazy like me you can skip the flipping.
- Top with basil if using. Serve fries and enjoy.
