Dill Pickle Smashed Potatoes
Ingredients
- 1 pound small red or yellow potatoes this is about 8 small potatoes
- 2 cups pickle juice
- 3-5 cups water (just enough to cover the potatoes)
- ½-1 teaspoon salt
- ½ teaspoon garlic powder
- black pepper to taste
- 1 tablespoon avocado or olive oil
- 1 tablespoon fresh chopped dill optional
Instructions
- Preheat oven to 425 degrees.
- Add pickle juice and water to a pot and bring to a boil. Add potatoes and boil for 15-20 minutes, until they are soft enough to smash.
- Add potatoes to a nonstick sheet pan or one lined with parchment paper. Using the bottom of a jar or glass, smash each potato.
- Coat potatoes in oil, garlic powder, salt and pepper. Bake for 30-35 minutes, until crisp.
- Let potatoes cool, top with dill (if using) and dig in.
