Garlic Parmesan Butternut Squash Fries

These Garlic Parmesan Butternut Squash Fries are a delicious healthy veggie side.

Ingredients
  

  • 1 medium butternut squash - cut into fries
  • cup fresh grated parmesan
  • 5 cloves garlic - minced or pressed
  • 3 tablespoons avocado oil or olive oil
  • ¼-1/2 teaspoon salt adjust to your saltiness preference
  • black pepper to taste
  • ½ teaspoon dried thyme
  • ½ teaspoon paprika

Optional toppings

  • 2 tablespoons fresh chopped basil or herb of choice.

Instructions
 

  • Preheat oven to 425 degrees.
  • Add butternut squash to a large bowl. Toss with all ingredients until fries are evenly coated.
  • Add fries to a sheet pan lined with parchment paper. Bake for 30-40 minutes, until fries are crisp. For best results, flip once halfway through. If you are lazy like me you can skip the flipping.
  • Top with basil if using. Serve fries and enjoy.
