A big factor in liking and enjoying vegetables is preparing them properly. Take brussels sprouts for example. Prepared badly (like boiling) they taste horrible. But if you get them nice and crispy they are delicious. These crispy general tso's brussels sprouts are a perfect recipe to convert over a veggie hater.
This recipe is the perfect vegan appetizer. Or you could serve it with your favorite protein to make it a complete dish. I ate mine for lunch with some quinoa and it was super satisfying.
The key to getting these brussels super crispy is using starch. I love having arrowroot starch on hand because it makes anything crispy without frying. Arrowroot starch is used again in the sauce to get it thick.
This recipe comes together in around 30 minutes. All you have to do is bake the brussels, and then while they are baking assemble the sauce. The sauce is made in a bowl and then thickened up on the stove.

What ingredients do I need for sticky general tso's brussels sprouts?
- brussels sprouts
- arrowroot starch
- vegetable broth
- soy sauce
- rice wine vinegar
- maple syrup
- sriracha
- garlic
- ginger
Substitutions
- maple syrup - maple syrup can be subbed with honey.
- sriracha - this can be subbed with hot sauce.
Instructions
- Preheat oven to 425 degrees.
- Toss brussels in oil, salt, pepper and starch. Roast for 25-30 minutes until crisp.
- Once your brussels are done roasting, set aside to cool and start your sauce. Whisk together sauce ingredients and then add to a saucepan over medium heat. Bring to a simmer until sauce has thickened, whisking sauce to prevent clumps. This will take about 2 minutes.
- Combine sauce with brussels and desired sides and toppings.

- 1 tablespoon neutral oil
- 1 teaspoon salt
- ½ teaspoon pepper
General Tso's Sauce
- ½ cup vegetable broth
- ¼ cup soy sauce
- 3 tablespoon rice wine vinegar
- 2 tablespoon maple syrup
- 1 ½ tablespoon sriracha or chili sauce
- 1 clove garlic - minced
- 1 ½ tablespoon arrowroot starch/flour or cornstarch
- 1 teaspoon ginger - minced
