    Crispy Baked Smashed Carrots

    Carrots are in season right now and begging to be cooked. While carrots are a versatile vegetable that go in everything, I love to eat them on their own to let their flavors shine. These crispy baked smashed carrots are an amazing way to enjoy carrots.

    These carrots are so good. They get crispy and the sweetness really comes through. I ate them in one sitting - delicious. They make a yummy snack but would also be a great side dish.

    • carrots
    • oil
    • salt
    • pepper
    • garlic powder
    • red pepper flakes

    Instructions to make crispy and spicy roasted carrots

    1. Add carrots to boiling water. Boil for 15-18 minutes until softened.
    2. Preheat oven to 425 degrees.
    3. Add carrots to a sheet pan lined with parchment paper. Using the bottom of a jar or glass, smashed each piece of carrot.
    4. Bake carrots for 30-35 minutes, until crisp. Let cool and dig in.

    Can I make this recipe in the air fryer?

    Yes, you can air fry these carrots for 8-12 minutes.

    Substitutions

    • Garlic powder - can be subbed with your favorite spice

    Storage instructions for Crispy Smashed Carrots

    The leftover carrots (if you have any (;) can be stored in a sealed container in your fridge for up to 3 days. Please note the carrots will lose crisp once stored.

    • 6 small or 3 large/medium carrots - cut into ¾ inch long pieces
    • 2 tablespoon oil
    • 1 teaspoon salt adjust to your preference
    • pepper to taste
    • pinch red pepper flakes
    • 1 teaspoon garlic powder

      Unusually use carrots for my morning juice drink or for the base in soups but last night I made the smashed carrots. I loved them and now I will make them all the time. I just felt healthier after eating them. I made a brown rice bowl and added them for the topping. Try them you will love them! Thanks Kristi for a great quick veggie side.
