Move over kale chips, bok choy chips are in town. Bok choy gets so crispy in the oven and I actually prefer it to kale. These Crispy Baked Bok Choy Chips (air fryer option) are an addicting snack.

I love the rich flavor bok choy imparts to these chips. Plus, they are packed with antioxidants and vitamins. Seriously so good. Even if you don't normally like bok choy these chips will change your mind.

Instructions to make crispy roasted garlic bok choy chips

- Preheat oven to 425 degrees.
- Add bok choy to a large bowl and toss with oil, salt, pepper and garlic powder.
- Line two baking sheets with parchment paper. Evenly distribute bok choy leaves, laying them flat. Try not to have any of the leaves touching each other.
- Bake for 6-8 minutes or until desired level of crispness is achieved. I baked mine for 8 minutes because I like mine on the browned side.
- If using an air fryer, add bok choy leaves to an air fryer lined with parchment paper in an even layer (don't crowd the leaves). Air fry for 4-6 minutes or until crisp. This will likely take you several batches.
- Enjoy chips as a side or snack.

We love bok choy! We actually just had a crispy bok choy appetizer at a restaurant that had garlic, shallots, pomegranate and soy sauce. It was SO good. Any thoughts on how to make it? Link to restaurant page for reference.

Hi Nikki, I think you could use the bok choy chips from this recipe and then take the soy dressing from this recipe and then just add in the pomegranate and shallots.

Made it just like this, no alterations, to have along with some rice with miso. It is amazing. I saved the leftovers for lunches to place in wraps, salads, etc., because they're not quite so crispy the next days. It worked great. In fact, I'm going to double it next time so that we have more leftovers. Thank you for these perfect instructions.
