If you don't like tofu, you need to try shredded tofu. Shredding tofu gets rid of all of the texture that some people do not like. These barbecue shredded tofu tacos are a vegan and high in protein. They are so flavorful and good, the perfect recipe for a tofu hater! These tacos are also topped with a delicious red cabbage slaw you will love.

Instructions
Toss tofu in spices and bake.
Add all slaw ingredients to a bowl and mix.
Add tofu to a pan and mix with barbecue sauce, water and soy sauce.
Assemble tacos and dig in!

What does shredded tofu taste like?
Shredded tofu has a meaty texture. There is no squishy texture like cubed tofu. It is delicious!
Substitutions
- mayo - vegan or regular mayo works for this recipe, you can also use yogurt
- cilantro - can be subbed with parsley
- lime - can be subbed with lemon

Barbecue Shredded Tofu Tacos
Ingredients
- 1 block firm or extra firm tofu - shredded
- ½ teaspoon garlic powder
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon paprika
- salt to taste
- black pepper to taste
- ¼ cup barbecue sauce
- ¼ cup water
- 1 tablespoon soy sauce
Slaw
- 4 cups finely chopped red cabbage
- ¼ cup mayo sub greek yogurt
- juice from 1 lime
- ½ cup finely chopped cilantro
- salt to taste
- black pepper to taste
- ½ teaspoon garlic powder
Other ingredients
- 5-6 Taco shells of choice
- ¼ cup finely chopped green scallions - optional
Instructions
- Preheat oven to 350 degrees.
- Add tofu to a sheet pan lined with parchment paper. Toss with a splash of oil and spices. Bake for 20-30 minutes.
- While tofu is cooking, make your slaw. Add all slaw ingredients to a bowl and mix together until everything is fully coated.
- Once your tofu is cooked add it to a skillet over low-medium heat. Mix together water, soy sauce and bbq sauce and pour over tofu. Stir to combine and cook for 5 minutes to let the tofu absorb.
- Warm taco shells in the microwave or stove top. Top with tofu, slaw and green scallions. Dig in and enjoy!
