- Add all ingredients to a bowl.
- Mix until smooth.
- Add batter to a loaf pan.
- Bake for 50 minutes.

- spelt flour - can be subbed with all purpose flour (can be gf all purpose), DO NOT SUB WITH ANY OTHER FLOURS.

Ingredients
- 3 spotty bananas - mashed
- 1 egg
- ⅓ cup olive oil
- ⅓ cup maple syrup or honey
- 1 ¾ cup spelt flour all purpose flour also works
- 2 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 cup blueberries + ½ teaspoon flour
Instructions
- Preheat oven to 350 degrees.
- Add blueberries to a bowl and toss with the flour until the blueberries are coated.
- Mix together bananas, egg, olive oil, maple syrup, spelt flour and baking powder until smooth. Do not overmix the batter. Lastly fold in blueberries.
- Pour batter into a loaf pan lined with parchment paper.
- Bake for 50-60 minutes or until a knife or tooth pick comes out semi clean. I baked mine for 60 minutes on the dot.
- Let bread cool for an hour in the loaf pan before slicing. If you slice the bread before it is cool it will be crumbly.
