I am not a huge baker but once in awhile I love to make cake. I have a good base down that is both gluten free and vegan while using healthier flours like oat and almond. This vegan chocolate strawberry cake is a healthier and delicious cake.
This cake has a vegan strawberry cream cheese frosting, so good. Just don't do what I did and frost the cake while it is still warm. My frosting came out a little melty but still so good.

Instructions to make vegan chocolate cake with strawberry cream cheese frosting
- Make your flax eggs by mixing flax and water. Set aside refrigerated for 10-30 minutes.
- Preheat oven to 350 degrees.
- Mix together your wet ingredients until smooth. Pour in dry ingredients and mix until just combined.
- Pour batter into a lined 8x8 baking dish.
- Bake cake for 35-40 minutes. Let cool completely, for about 30 minutes.
- Add all frosting ingredients to a blender and blender until smooth.
- Top cooled cake with frosting. Refrigerate again for about 15-20 minutes so the frosting sets.

- arrowroot starch or corn starch
- coconut oil
- vegan yogurt
- vanilla extract
- strawberries
- cashews
- maple syrup
Substitutions
- coconut sugar - can be subbed with brown sugar.
- maple syrup - can be subbed with honey.
- flax eggs - I believe real eggs would work here.

Vegan Chocolate Strawberry Cake
Ingredients
Wet
- 2 flax eggs 2 tablespoons ground flax seeds + 5 tablespoons water
- ½ cup apple sauce
- ½ cup milk i used almond milk
- 2 tablespoons oil of choice
- 1 teaspoon vanilla
- ½ cup coconut sugar
- 2 tablespoons maple syrup
Dry
- 1 ½ cups oat flour
- 1 cup almond flour
- ¼ cup cacao powder
- 1 teaspoons baking powder
- ½ teaspoon baking soda
- 1 tablespoon arrowroot starch or corn starch
Frosting
- ¼ cup melted coconut oil do not sub
- ⅔ cup thick vegan yogurt coconut is best
- 6 strawberries tops cut off
- 1 teaspoon vanilla extract
- 2-4 tablespoons granulated sugar
- 1 ½ cups raw cashews soaked for at least 2 hours
