Vegan Chocolate Strawberry Cake

Ingredients
  

Wet

  • 2 flax eggs 2 tablespoons ground flax seeds + 5 tablespoons water
  • ½ cup apple sauce
  • ½ cup milk i used almond milk
  • 2 tablespoons oil of choice
  • 1 teaspoon vanilla
  • ½ cup coconut sugar
  • 2 tablespoons maple syrup

Dry

Frosting

  • ¼ cup melted coconut oil do not sub
  • cup thick vegan yogurt coconut is best
  • 6 strawberries tops cut off
  • 1 teaspoon vanilla extract
  • 2-4 tablespoons granulated sugar
  • 1 ½ cups raw cashews soaked for at least 2 hours

Instructions
 

  • Make your flax eggs by mixing flax and water. Set aside refrigerated for 10-30 minutes.
  • Preheat oven to 350 degrees.
  • Mix together your wet ingredients until smooth. Pour in dry ingredients and mix until just combined.
  • Pour batter into a lined 8x8 baking dish.
  • Bake cake for 35-40 minutes. Let cool completely, for about 30 minutes.
  • Add all frosting ingredients to a blender and blend until smooth.
  • Top cooled cake with frosting. Refrigerate again for about 15-20 minutes so the frosting sets. Top with fresh chopped strawberries if desired.
