    Vegan Buffalo Baked Tofu with Broccoli

    When I was younger I used to love going to Whole Foods with my mom because we would always get lunch in the prepared foods section. One of my favorite things there was their buffalo tofu! At the time I did not know how to cook for myself so it was a special treat. This Vegan Buffalo Baked Tofu with Broccoli is a copycat version of my beloved Whole Foods buffalo tofu.

    What do I need to make buffalo tofu?

    • tofu
    • arrowroot powder
    • garlic powder
    • paprika
    • soy sauce
    • oil
    • broccoli
    • oil
    • hot sauce
    • tahini
    • apple cider vinegar
    • maple syrup
    • soy sauce

    Is buffalo sauce vegan?

    Usually - no! Buffalo sauce typically has butter or cream in it. This buffalo sauce uses tahini to make the sauce creamy.

    What should I eat this buffalo tofu with?

    I paired this broccoli but it also goes amazing in a salad or with fresh cucumbers or celery.

    Ingredients

    Tofu

    • 1 block tofu - drained, pressed and cubed
    • 1 ½ tbsp arrowroot powder/starch or corn starch
    • 1 tsp garlic powder
    • 1 tsp paprika
    • 1 tbsp soy sauce
    • 1 tbsp oil of choice

    Broccoli

    • 1-2 heads broccoli
    • 1-2 tablespoon oil of choice
    • salt/pepper to taste

    Buffalo Sauce - Medium Spicy

    • ¼ cup hot sauce(less or more for mild/hot)
    • 2 tbsp tahini (or sub cashew butter or vegan butter)
    • 1 tbsp apple cider vinegar
    • ½ tsp maple syrup
    • 1 tbsp soy sauce

    Instructions

    1. Preheat oven to 425 degrees.
    2. Toss tofu in oil, soy sauce and spices. Pour in starch 1 tablespoon at a time and shake to coat. Lay tofu on a lined sheet pan.
    3. Toss broccoli in oil, starch and salt/pepper. Add to sheet pan with tofu.
    4. Roast tofu and broccoli for 30 minutes or until crisped.
    5. In a bowl, mix together all buffalo sauce ingredients.
    6. Coat tofu in sauce and serve with broccoli.

      Made this buffalo tofu and added it to some rice and veggies.
      It was delish! Definitely going to eat it again with sweet potato fries. Never tried the combo of hot sauce and tahini before, but damn, so good!
