Truffle Garlic Parmesan Carrot Fries

These Baked Truffle Parmesan Carrot Fries are a delicious veggie side.

Ingredients
  

  • 12 small carrots - cut into fries or 6 regular sized
  • 1-2 tablespoons olive oil
  • 3 cloves garlic - minced or pressed
  • ½ cup grated parmesan
  • pinch salt
  • pinch black pepper
  • ¼ teaspoon paprika
  • 1-3 teaspoons truffle oil
  • 1-2 tablespoons fresh chopped basil or herb of choice

Instructions
 

  • Preheat oven to 425 degrees.
  • Add carrots along with all other ingredients except for truffle oil and basil to a bowl and toss together until the carrots are fully coated with the parmesan and spices.
  • Add carrots to a sheet pan lined with parchment paper. Bake for 27-35 minutes, until the carrots are crisped up and the parmesan is browned.
  • Top carrot fries with truffle oil and basil. Enjoy.
