I recommend storing the clusters in the fridge in a sealed container for up to 3 days because this gives them the soft ice cream like texture.
You can also freeze them for 3 months and thaw them out as you want to eat them.
Recipe Pro-Tips for healthy snickers frozen yogurt bites
Make sure your clusters are full frozen before dipping them in chocolate. Otherwise they will melt and create a whole mess.
DO NOT omit the oil when you melt the chocolate. This prevents the chocolate from seizing (getting clumpy).
If you want to up the protein content use greek yogurt as your yogurt. I have found that greek yogurt does take a little longer to freeze and you may have to let the clusters freeze for a full 2 hours.

Snickers Frozen Yogurt Clusters (high protein)
Equipment
Ingredients
- 12 dates - pitted and roughly chopped
- 1 cup thick vanilla or plain yogurt of choice I recommend either greek or coconut yogurt
- ¼ cup nut butter of choice
- ½ cup chopped nuts of choice
- 1 ¼ cup dark chocolate chips
- 1 teaspoon hard coconut oil
- pinch flaky sea salt
Instructions
- Add yogurt and nut butter to a bowl and mix until smooth. Add in nuts and dates. Mix until combined.
- Spoon* out mixture onto a sheet pan lined with parchment paper (a plate or other flat surface also works) into ~7 evenly sized clusters. Freeze for 1-3 hours or overnight, until hardened. I have found that dairy yogurt takes longer to freeze than non dairy.
- Melt together chocolate and coconut oil. I melted mine for 3 30 second intervals in the microwave.
- Dunk each cluster in dark chocolate. Sprinkle over the flaky salt. Freeze again for 10-15 minutes, until set. Dig in and enjoy!**
Notes
*I used an ice cream scooper.
**If you want your clusters to have a softer inner texture instead of a frozen texture let them sit out for 10 minutes.
