Step 1
Mix together greek yogurt and protein powder.

Add greek yogurt to sheet pan, add a popsicle stick and freeze.

- greek yogurt- if you want to keep this recipe vegan use a thick coconut yogurt like Cocojune.
- dark chocolate - milk chocolate could potentially be used but I recommend dark.

High Protein Chocolate Greek Yogurt Popsicle
Ingredients
- 1 ~4.4 oz container unsweetened/flavored greek yogurt
- 2 tablespoons vanilla protein powder
- ½ cup dark chocolate chips
- ½ teaspoon coconut oil optional but this helps the chocolate melt more smoothly.
- pinch flaky sea salt optional
Instructions
- Add greek yogurt and protein powder to a bowl and mix until smooth. Add the greek yogurt mixture in a circle shape to a sheet pan or cutting board lined with parchment paper or silicone. Freeze for 1-2 hours until very hard.
- Add chocolate and coconut oil to a bowl and melt together at 3 30 second intervals in the microwave, stirring each time.
- Dip/cover popsicle in chocolate. I found the easiest way is to cover one side of the popsicle in chocolate on the sheet pan and then flip and cover again. Top with flaky sea salt if using and freeze again for 15 minutes. Dig in and enjoy.
