Step-by-Step Instructions

Blend: Blend roasted red peppers, broth, and feta until smooth.
Sauté: Cook shallot, then add garlic, parsley, and seasonings.

Use a good quality feta. I always recommend using an authentic greek feta, I love Kourella's, Mt Vikos or Aphrodite feta.
Use pressure cooked beans if you have trouble digesting beans. I absolutely love the eden foods brand as they are pressure cooked and soaked!

High Protein Roasted Red Pepper Beans
Equipment
- 1 skillet
Ingredients
- 16 oz jar roasted red peppers - drained*
- 1 ½ cups chicken bone broth can sub vegetable broth or regular chicken broth
- ~5 oz feta
- 1 tablespoon olive oil
- 1 medium shallot - finely chopped
- 4-6 cloves garlic - minced
- ⅓ cup finely chopped parsley
- 1 teaspoon za'atar
- ½ teaspoon cumin
- ½ teaspoon smoked paprika
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 3 cans cannellini beans - drained cans should be 15 oz
- 3-5 handfuls spinach you don't need to be exact here, spinach cooks down easily
Instructions
- Add red peppers, broth and feta to a blender. Blend until smooth.
- Heat oil over medium heat in a skillet. Add shallot and cook for 5 minutes. Add garlic, salt, pepper, za'atar' paprika, cumin and parsley. Cook for another 5 minutes.
- Add red pepper mixture and beans to the pan. Partially mash the beans (about ¼ of the beans) and bring to a simmer. Simmer for 10-15 minutes, being careful not to boil and stirring occasionally.
- Turn heat to low and fold in spinach. Serve and enjoy.

I've never tried bone broth before or this combination of foods, but it tastes so good. I paired it with high protein sourdough bread. The flavours are so rich, you could really eat this with any base- like rice for example. I'm trying to add more plant protein to my meals so this is definitely a favourite. I'll also be using this for school. I can't get over this website enough all the recipes are delicious.
