No turning on your oven, this recipe is no bake and easy to make.
Ingredients
- dates
- almond butter
- oat flour
- coconut oil
- salt
- dark chocolate
- vanilla extract

Substitutions
- almond butter - any thick nut or seed butter works. I don't suggest using tahini as it is too liquidy.
- oat flour - almond flour would be a good substitute however you would need a little more, start with ⅓ cup and go from there.
- dark chocolate - milk chocolate works.
Step-by-Step Instructions

Step 1
Blend together truffle filling.

Step 2
Roll dough into balls and freeze.

Step 3
Dip in chocolate, add salt and freeze again.

Step 4
Serve and enjoy!
Storage instructions
I recommend storing the truggles in the fridge in a sealed container for up to 6 days.
You can also freeze them for 3 months and thaw them out as you want to eat them.

A good dark chocolate will make this recipe. I love Hu Gems, whole foods carries them.
I recommend using dates with the pit as they are fresher. I love Joolies dates or this brand.

Dates are high in fiber and also have vitamins like magnesium.
In my opinion yes they have a caramel flavor! They aren't as sweet as caramel but they taste very similar.

Salted Caramel Date Truffles
Equipment
Ingredients
- 1 cup tightly packed pitted* dates (about 16 dates)
- ¼ cup almond butter
- ¼ cup oat flour
- pinch salt
- ½ teaspoon vanilla extract
- 1 tablespoon solid coconut oil can be unrefined or refined
- ½-3/4 cup chocolate chips or chopped chocolate
- flaky salt to taste
Instructions
- Add the first 6 ingredients to a food processor and blend until combined.
- Form 7 evenly truffles by grabbing a small handful of dough (about 1 ½ tablespoons), smushing it together, and then rolling into a ball.
- Add date balls to a sheet pan, cutting board or plate. Freeze for about 10 minutes.
- Melt chocolate chips by heating them for 3 30 second intervals in the microwave and stirring after each interval.
- Dip and cover each ball in chocolate and add back to your surface that you used to freeze the balls. Coat in flaky salt and freeze again for 10-20 minutes until chocolate has hardened.

The instructions don’t say what to do with the coconut oil. Do you add it to the truffle filling/dough or use it to help melt the chocolate? Also, does it have to be solid coconut oil or can it be melted?

That was a typo which i just fixed, thanks for letting me know. You can use melted coconut oil but I prefer for it to be solid.
