Add the first 6 ingredients to a food processor and blend until combined.
Form 7 evenly truffles by grabbing a small handful of dough (about 1 ½ tablespoons), smushing it together, and then rolling into a ball.
Add date balls to a sheet pan, cutting board or plate. Freeze for about 10 minutes.
Melt chocolate chips by heating them for 3 30 second intervals in the microwave and stirring after each interval.
Dip and cover each ball in chocolate and add back to your surface that you used to freeze the balls. Coat in flaky salt and freeze again for 10-20 minutes until chocolate has hardened.
Notes
*I recommend buying dates WITH the pits and removing them yourself. Dates with the pits left in are typically fresher.
