Recently at my favorite restaurant in ATX I had Jalapeño falafels and since then I have been obsessed with creating them. I decided to put my own twist on the recipe and use white beans instead and they came out SO good. These Jalapeño Lime White Bean Falafels are a delicious twist on your standard falafel recipe.

These falafels are perfect to eat as is, with your favorite dip, in a salad or in a sandwich or wrap. Honestly the possibilities are endless. I ate mine in a wrap with some hummus, arugula, beets and feta and it came out SO good. This is the type of recipe that is a crowd pleaser for carnivores and veg heads alike.

These jalapeño cilantro white bean falafels are

Ingredients for spicy white bean falafels
- white beans
- olive oil
- cumin
- paprika
- salt
- pepper
- garlic
- cilantro
- corn starch or arrowroot starch

Instructions to make gluten free white bean falafels

- Preheat oven to 400 degrees fahrenheit.
- Add all ingredients to a food processor. Process until semi smooth, scraping down the sides as needed. The mixture will still have texture but you should be able to form it into a falafel.
- Line a sheet pan with parchment paper. Using your hands and about 2 tablespoons of mixture at a time, form evenly sized falafels.
- Bake for 25-30 minutes, until falafels have started to brown.
- Enjoy falafels as is, in a salad, with your favorite dip, or in a wrap or sandwich.
Storage instructions
The leftover falafels can be stored in a sealed container in your fridge for up to 3 days.
Substitutions
- Cilantro - can be subbed with parsley
- White beans - can be subbed with DRIED chickpeas. Do NOT use canned beans for this recipe
Equipment
I used my Cusinart 8 cup food processor for this recipe, but food processor would work.

Jalapeño Lime White Bean Falafels

This makes 8-9 falafels
- 1 cup dried white beans - soaked for for at least 4 hours or up to 24 and patted dry
- 2 cloves garlic
- 2 scallions - roughly chopped
- juice from ½ lime
- ½ jalapeno - seeded
- ½ teaspoon paprika
- ½ teaspoon cumin
- 1 teaspoon salt
- black pepper to taste
- 1 tablespoon corn starch or arrowroot starch
- 1 tablespoon olive oil
