Jalapeno White Bean Falafels

These Jalapeno White Bean Falafels are a fun twist on your standard falafel recipe.

Ingredients
  

  • 1 cup dried white beans - soaked for for at least 4 hours or up to 24 and patted dry
  • 2 cloves garlic
  • 2 scallions - roughly chopped
  • 1 cup cilantro (from 1 bunch)
  • juice from ½ lime
  • ½ jalapeno - seeded
  • ½ teaspoon paprika
  • ½ teaspoon cumin
  • 1 teaspoon salt
  • black pepper to taste
  • 1 tablespoon corn starch or arrowroot starch
  • 1 tablespoon olive oil

Instructions
 

  • Preheat oven to 400 degrees fahrenheit.
  • Add all ingredients to a food processor. Process until semi smooth, scraping down the sides as needed. The mixture will still have texture but you should be able to form it into a falafel.
  • Line a sheet pan with parchment paper. Using your hands and about 2 tablespoons of mixture at a time, form evenly sized falafels.
  • Bake for 25-30 minutes, until falafels have started to brown.
  • Enjoy falafels as is, in a salad, with your favorite dip, or in a wrap or sandwich.

Notes

This makes 8-9 falafels.
