Substitutions
- coconut oil - any oil works. I do not recommend omitting as this will make the chocolate seize.
- cottage cheese - I think greek yogurt would work as a sub but I have not tried it.
- dark chocolate - I believe milk chocolate would work. I don't recommend white chocolate.
Step-by-Step Instructions

Step 1
Blend together all fudge ingredients.

Step 2
Add to loaf pan, top with strawberries and freeze.

Step 3

Storage instructions
This can be stored in the freezer for 2 months or the fridge for 5 days. It is best served cold as it will soften up as it is left at room temp.

Use a good quality chocolate for the best tasting fudge. I like this brand.
If you don't like cottage cheese it is probably because you are using a low quality brand. Kalona Super Natural or Good Culture are my favorite brands.
Recipe FAQS
I think you could use a thick vegan yogurt like coconut however I have not tried this so no guarantees!
Cottage cheese is having a moment right now, for good reason. It is packed with protein, healthy fats, probiotics and vitamins.
I recommend using dark chocolate. I haven't tested this with milk chocolate but it would probably work.

High Protein Cottage Cheese Strawberry Fudge
Equipment
Ingredients
- 1 cup chocolate chips I recommend dark chocolate
- 1 teaspoon coconut oil
- 1 cup full fat cottage cheese
- 1 teaspoon vanilla extract
toppings
- sliced strawberries or fruit of choice I chopped up 2 strawberries
- flaky sea salt
- additional melted chocolate
Instructions
- Melt together chocolate and coconut oil until smooth. I melted mine for 3 30 second intervals in the microwave, stirring after each time.
- Blend together cottage cheese and chocolate in a food processor or blender. I used a blender but I think it would have been easier in a food processor.
- Add fudge to a loaf pan lined with parchment paper. Top with strawberries. Freeze for 2-3 hours until set.
- Drizzle over melted chocolate and flaky salt if using. Slice and dig in.
