Melt together chocolate and coconut oil until smooth. I melted mine for 3 30 second intervals in the microwave, stirring after each time.
Blend together cottage cheese and chocolate in a food processor or blender. I used a blender but I think it would have been easier in a food processor.
Add fudge to a loaf pan lined with parchment paper. Top with strawberries. Freeze for 2-3 hours until set.
Drizzle over melted chocolate and flaky salt if using. Slice and dig in.
