High protein cottage cheese cheesecake toast
Ingredients
- ¼ cup + 2 tablespoons cottage cheese
- 1 medium egg
- 1 tablespoon coconut sugar or granulated sugar of choice
- ½ teaspoon vanilla extract
- ~¼ teaspoon cinnamon adjust to the amount of cinnamon you want
- 2 slices sourdough or hearty bread of choice
Optional Toppings
- ½ cup frozen blueberries* I like wymans frozen wild blueberries
Instructions
- Preheat oven to 425 degrees.
- Add cottage cheese, egg, sugar and vanilla to a food processor. Blend until smooth.
- Press down on middle bread to create an indent. If you're using a hearty bread like sourdough it will be harder to make and indent but as long as there is a slight indent in the bread it is fine. Coat bread in cinnamon.
- Add bread slices to sheet pan lined with parchment paper or silicone. Add half of the cheesecake filling to one piece of bread and then repeat with the other bread.
- Bake for 10-15 minutes, until bread is at your desired crispness level. If you have an air fryer you can also air fry this toast at 400 degrees for 7-10 minutes.
- Heat a small sauce pan over medium heat. Add the frozen blueberries and cook until warmed.
- Add cooked blueberries to toast and dig in.
