Healthy Zucchini Banana Bread with Spelt Flour
Ingredients
- 2 spotty bananas - mashed
- 2 cups shredded zucchini
- 1 egg
- ⅓ cup avocado oil any neutral liquid oil works
- ⅓ cup maple syrup or honey
- 1 ½ cup + 2 tablespoons spelt flour all purpose flour also works
- 2 teaspoon baking powder
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- 1 cup chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Add blueberries to a bowl and toss with the flour until the blueberries are coated.
- Mix together bananas, zucchini, egg, olive oil, maple syrup, spelt flour and baking powder until smooth. Lastly fold in the chocolate chips. Do not overmix the batter.
- Pour batter into a loaf pan lined with parchment paper.
- Bake for 50-60 minutes or until a knife or tooth pick comes out semi clean. I baked mine for 60 minutes on the dot.
- Let bread cool for an hour in the loaf pan before slicing. If you slice the bread before it is cool it will be crumbly.

This bread is so yummy and easy to make! I used frozen shredded zucchini from our garden and a few brown bananas that I had thrown into the freezer as well. Since both were frozen I did have to cook it a little longer due to the liquid. But I doubled the batch and shared some with my coworkers and bookclub!
