  • Preheat oven to 350 degrees.
  • Add blueberries to a bowl and toss with the flour until the blueberries are coated.
  • Mix together bananas, zucchini, egg, olive oil, maple syrup, spelt flour and baking powder until smooth. Lastly fold in the chocolate chips. Do not overmix the batter.
  • Pour batter into a loaf pan lined with parchment paper.
  • Bake for 50-60 minutes or until a knife or tooth pick comes out semi clean. I baked mine for 60 minutes on the dot.
  • Let bread cool for an hour in the loaf pan before slicing. If you slice the bread before it is cool it will be crumbly.
