Green Goddess Chickpea Power Bowl
Ingredients
chickpeas + zucchini
- 1 zucchini - sliced and then halved
- 1 can chickpeas - drained
- ½ teaspoon cumin
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 tablespoon oil
Green goddess sauce
Other ingredients
- ⅓-1/2 cup cooked quinoa or grain of choice
- ½ cup chopped arugula or green of choice
Instructions
- Preheat oven to 425 degrees.
- Add chickpeas and zucchini to a sheet pan lined with parchment paper or silicone. Toss with oil, salt, pepper and spices. Bake for 25-30 minutes.
- Add all green goddess sauce ingredients to a blender or food processor and blend until smooth.
- Assemble bowls with quinoa, chickpeas, zucchini, sauce and arugula. Dig in and enjoy.
