Ingredients
  

chickpeas + zucchini

Green goddess sauce

  • ¼ cup greek yogurt plant based yogurt also works
  • 3 tablepoons apple cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 2 cloves garlic
  • ¼ cup basil
  • ¼ cup parsley
  • 1 teaspoon mustard
  • ¼ cup scallions
  • pinch salt/pepper
  • 1-2 tablespoons water to thin

Instructions
 

  • Preheat oven to 425 degrees.
  • Add chickpeas and zucchini to a sheet pan lined with parchment paper or silicone. Toss with oil, salt, pepper and spices. Bake for 25-30 minutes.
  • Add all green goddess sauce ingredients to a blender or food processor and blend until smooth.
  • Assemble bowls with quinoa, chickpeas, zucchini, sauce and arugula. Dig in and enjoy.
