Garlic Parmesan Roasted Zucchini
This garlic parmesan roasted zucchini is the perfect summer veggie side.

- 2 zucchinis - sliced in ~¼ inch think pieces
- 3-4 cloves garlic - minced
- ⅓ cup parmesan
- 1 tablespoon olive oil
- pinch salt/pepper
- juice from ½ lemon
- ¼ cup fresh chopped basil
Preheat oven to 425 degrees.
Add zucchini and all other ingredients except for the basil to a bowl. Toss to combine, until zucchini is fully coated.
Add zucchini to a sheet pan lined with parchment paper. If any pieces of garlic or parmesan are left in the bowl add them to the tops of the zucchini slices.
Roast zucchini for 20-30 minutes, flipping once halfway through.
Serve zucchini topped with basil and enjoy.
