Garlic Parmesan Roasted Zucchini

This garlic parmesan roasted zucchini is the perfect summer veggie side.

Ingredients
  

  • 2 zucchinis - sliced in ~¼ inch think pieces
  • 3-4 cloves garlic - minced
  • cup parmesan
  • 1 tablespoon olive oil
  • pinch salt/pepper
  • juice from ½ lemon
  • ¼ cup fresh chopped basil

Instructions
 

  • Preheat oven to 425 degrees.
  • Add zucchini and all other ingredients except for the basil to a bowl. Toss to combine, until zucchini is fully coated.
  • Add zucchini to a sheet pan lined with parchment paper. If any pieces of garlic or parmesan are left in the bowl add them to the tops of the zucchini slices.
  • Roast zucchini for 20-30 minutes, flipping once halfway through.
  • Serve zucchini topped with basil and enjoy.
