French Onion Stuffed Spaghetti Squash
Ingredients
Filling
- 1 yellow or sweet onion - finely sliced
- 1 tablespoon butter or oil butter makes the caramelization process easier but you can also use oil
- 3-4 cloves garlic - minced
- 1 can white beans - drained
- ½-1 teaspoon salt
- black pepper to taste
- 1 teaspoon dried thyme
- ½ cup shredded cheddar cheese or gruyere cheese gruyere is traditional but I prefer cheddar
Other ingredients
- 1 spaghetti squash - halved and seeded
- 1-2 teaspoons oil
- ½-1 teaspoon salt
- Black pepper to taste
Instructions
- Preheat oven to 400 degrees.
- Add butter to a skillet over medium heat. Once melted add onions and a pinch of salt. Reduce heat to medium low and cook onions for 40-50 minutes, stirring occasionaly.
- While onions are cooking, cook your squash. Coat the inside of the squash in oil, salt and pepper. Add to a sheet pan lined with parchment paper face down. Cook for 35-50 minutes. The squash should be browned and the inside should be fork tender. Remove squash from oven and keep the oven on.
- Once onions are caramelized, add garlic, beans, thyme, salt, pepper, and half of the cheese. Cook for 3 minutes.
- Divide out filling and add to squash. Top with the remaining cheese. Pop the squash back in the oven until the cheese is melted.
