Crunchy Asian Asparagus Salad

This Crunchy Asian Asparagus Salad is the perfect spring side salad.

Ingredients
  

Salad

  • 1 tablespoon sesame oil
  • 2 bunches asparagus - heads cut off and then finely sliced *
  • 1 cup cashews - roughly chopped
  • ½ jalapeno - finely chopped
  • ½ cup cilantro - finely chopped
  • salt/pepper to taste

Dressing

  • cup toasted sesame oil**
  • 2 tablespoons rice vinegar
  • 1 tablespoon miso
  • ½ teaspoon grated ginger
  • 1 clove garlic - grated
  • juice from 1 lime
  • salt/pepper to taste I did not add any additional salt to the dressing but adjust to your preference.

Instructions
 

  • Heat sesame oil in a large skillet over medium heat. Add asparagus and cook for 2-3 minutes. You want to just lightly cook the asparagus but leave it still crunchy.
  • Add all of your dressing ingredients to a bowl and whisk together until smooth.
  • Add all salad ingredients to a bowl. Pour over dressing and toss to combine. Taste and add additional salt and pepper if desired.

Notes

*Be sure to also remove the rough ends on the asparagus. 
**If you would like to save money you can use a combination of standard sesame oil with toasted sesame oil.
