- 1 tablespoon sesame oil
- 2 bunches asparagus - heads cut off and then finely sliced *
- 1 cup cashews - roughly chopped
- ½ jalapeno - finely chopped

- salt/pepper to taste
Dressing
- ⅓ cup toasted sesame oil**
- 2 tablespoons rice vinegar

- juice from 1 lime
- salt/pepper to taste I did not add any additional salt to the dressing but adjust to your preference.
Heat sesame oil in a large skillet over medium heat. Add asparagus and cook for 2-3 minutes. You want to just lightly cook the asparagus but leave it still crunchy.
Add all of your dressing ingredients to a bowl and whisk together until smooth.
Add all salad ingredients to a bowl. Pour over dressing and toss to combine. Taste and add additional salt and pepper if desired.
*Be sure to also remove the rough ends on the asparagus.
**If you would like to save money you can use a combination of standard sesame oil with toasted sesame oil.
