These crispy baked bok choy chips (air fryer option) are a delicious way to enjoy bok choy.

Ingredients
  

  • 4 heads baby bok choy - roots cut off
  • salt to taste I recommend ½ teaspoon
  • black pepper to taste
  • ½ teaspoon garlic powder
  • 2 tablespoon oil

Instructions
 

  • Preheat oven to 425 degrees.
  • Add bok choy to a large bowl and toss with oil, salt, pepper and garlic powder.
  • Line two baking sheets with parchment paper. Evenly distribute bok choy leaves, laying them flat. Try not to have any of the leaves touching each other.
  • Bake for 6-8 minutes or until desired level of crispness is achieved. I baked mine for 8 minutes because I like mine on the browned side.
  • If using an air fryer, add bok choy leaves to an air fryer lined with parchment paper in an even layer (don't crowd the leaves). Air fry for 4-6 minutes or until crisp. This will likely take you several batches.
  • Enjoy chips as a side or snack.

Notes

This makes 2-3 servings of bok choy.
This recipe is great for a snack or healthy side.
