Add bok choy to a large bowl and toss with oil, salt, pepper and garlic powder.
Line two baking sheets with parchment paper. Evenly distribute bok choy leaves, laying them flat. Try not to have any of the leaves touching each other.
Bake for 6-8 minutes or until desired level of crispness is achieved. I baked mine for 8 minutes because I like mine on the browned side.
If using an air fryer, add bok choy leaves to an air fryer lined with parchment paper in an even layer (don't crowd the leaves). Air fry for 4-6 minutes or until crisp. This will likely take you several batches.
Enjoy chips as a side or snack.
