Chocolate Cottage Cheese Ice Cream (ice cream)

This Chocolate Cottage Cheese Ice Cream is a delicious healthy treat for summer.

Equipment

Ingredients
  

  • 1 16 oz container cottage cheese (preferably full fat)
  • ¼-1/3 cup honey I used ¼ cup and found it sweet enough but taste and add enough sweetener to your palette!
  • ¼ cup cacao powder
  • 2 tablespoons almond butter cashew butter or peanut butter also work - peanut imparts a stronger flavor
  • 1 teaspoon vanilla extract
  • flaky sea salt to taste optional

Instructions
 

  • Add cottage cheese, cacao, almond butter, vanilla and honey to a food processor or blender. Blend until smooth.
  • Add ice cream to a loaf pan or container and freeze for 2-3 hours until set.
  • Serve ice cream topping with flaky sea salt if desired.

Notes

This makes 2-3 servings of ice cream.
This ice cream will come out very hard after sitting in the freezer for more than a few hours, to combat this let it sit out for 30 minutes or so to soften.
