Baked Carrot Feta Pasta (High Protein)
Ingredients
- 3 cups roughly chopped carrots
- 1 tablespoon oil
- 1 block feta
- 4 cloves garlic
- ¼ yellow onion
- 1 teaspoon salt
- 1 tablespoon fresh chopped dill + more for serving
- 1-2 cups bone broth (can use veg broth or even water)*
Other ingredients
- 1 12 oz package cooked pasta of choice**
- 1 can/jar white beans - drained
Instructions
- Add carrots to a sheet pan. Toss in oil, salt and pepper. Add feta onion and garlic to the sheet pan. Splay out the onion so each layer is flat on the sheet pan. Bake for about 20 minutes and then remove the garlic (you want the garlic browned and soft but not burnt). Then bake for 10-15 more minutes, until carrots and onion are fork tender.
- Add veggies to a blender along with dill and broth. Blend until smooth.
- Add pasta, sauce, and beans to a pan over low heat. Toss pasta with sauce and beans until everything is combined.
- Divide out pasta, top with additional dill if desired and serve.
