Roasted Cherry Tomato and Ricotta Pasta
Ingredients
- ~3 cups cherry tomatoes
- 6-10 cloves garlic
- ½ cup ricotta
- ⅓ cup broth of choice
- ½ teaspoon oregano
- pinch red pepper flakes optional
- salt to taste I suggest ¼ teaspoon
- black pepper to taste
- 2 tablespoons basil - divided
- 1 tablespoon tomato paste
Other ingredients
- 2 tablespoons chopped basil
- 3 servings pasta
- 2-3 tablespoons shredded parmesan
- 1-3 tablespoons olive oil
Instructions
- Preheat oven to 400 degrees.
- Add tomatoes and garlic cloves to a sheet pan lined with parchment paper or silicone. Bake for 30-35 minutes, until everything is cooked through.
- Add all sauce ingredients to a blender. Blend until smooth.
- Mix together pasta and sauce. Divide out and top with the rest of the basil, olive oil and parmesan. Dig in and enjoy.
