- bell pepper
- oil

- Edamame - can be subbed with any bean or tofu.
- Green beans and bok choy - can be subbed with your favorite veggie.
- Sriracha - can be subbed with hot sauce or chili garlic sauce.

VEGAN EDAMAME POKE BOWL WITHOUT TOFU
Ingredients
Roasted Vegetables
- 1 lb green beans - rough ends chopped off
- 1 head bok choy - cut in half
- 1 bell pepper - roughly chopped
- 1 tablespoon oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
Spicy mayo sauce
- ¼ cup vegan or regular mayo
- 2 tablespoon sriracha
- juice from ½ lime
- 1 garlic clove - minced
- pinch salt/pepper
- 1 tablespoon rice wine vinegar
Other ingredients
- 1 cup cooked sushi rice or grain of choice
- 1 16 oz bag of cooked edamame I cooked mine from frozen and shelled them myself
- ~1 cup chopped scallions
- + other toppings of choice like avocado red pepper flakes, etc
Instructions
- Add green beans, bok choy and bell pepper to a sheet pan lined with parchment paper. Toss with oil, salt, pepper and garlic powder. Roast for 30 minutes.
- Make your spicy mayo sauce by mixing together sauce ingredients. Set aside.
- Prepare bowls with rice, edamame, vegetables, and sauce. Add any other toppings you desire.
