This nourish bowl is high in protein thanks to the quinoa and chickpeas. The dressing is to die for, it is fresh and full of herbs. This bowl is the perfect fresh winter recipe.

- chickpeas
- beets
- broccoli

Instructions to make winter harvest nourish bowl
- Preheat oven to 425 degrees.
- Add quinoa, beets, broccoli and chickpeas to a sheet pan lined with parchment paper. Coat in oil, salt, pepper and garlic powder. Bake for 30-35 minutes, until chickpeas and quinoa are crisp.
- Add all dressing ingredients to a food processor or blender. Blend until smooth.
- Divide out filling and lettuce between two bowls. Pour dressing over both bowls and serve.

Ingredients
Roasted ingredients
- 1 heaping cup cooked quinoa
- 1 can chickpeas - drained and patted dry
- 3 beets - cubed
- 1 head broccoli - cut or broken into small florets
- 1-2 tablespoon oil
- salt to taste
- pepper to taste
- 1 teaspoon garlic powder
Dressing
- ¼ cup scallions
- ¼ cup parsley
- ¼ cup basil
- 1 garlic clove
- .25 cup olive oil
- 2 tablespoons water
- juice from 1 lemon
- 2 tablespoons apple cider vinegar
- ½ tablespoon maple syrup
- salt/pepper to taste
Other ingredients
- lettuce or green of choice about ¼ cup per bowl
