½cupgraham crackersif using large graham crackers quarter them, I used simple mills sweet thins
½cupchocolate chips or chopped chocolate

additional chocolate chips
additional chopped marshmallows
flaky salt
ice cream
additional crushed graham crackers
Instructions
Preheat oven to 350 degrees.
Add egg, blended cottage cheese, maple syrup and vanilla to a large bowl. Mix until smooth. Add flour, baking soda and salt to the same bowl and mix again until combined. Lastly fold in the chocolate chips, graham crackers and marshmallows.
Coat 10 inch cast iron skillet in butter or oil. Add batter to the skillet and and spread until it is an even layer. Top with additional chocolate chips and marshmallows if desired.The cookie skillet will seem a little thin but it will puff up in the oven.
Bake cookie skillet for 20-30 minutes, until a toothpick or knife comes out clean.
Top skillet with flaky salt and graham crackers if using, serve with ice cream and dig in.
