Pumpkin Pie Cottage Cheese Ice Cream (High Protein)
Ingredients
- 1 16 oz container cottage cheese preferably full fat
- ¼ cup honey
- ¼ cup pumpkin puree
- ½ teaspoon pumpkin spice***
- ½ teaspoon vanilla extract
- ¼ cup graham crackers* I used Simple Mills sweet thins
Instructions
- Add cottage cheese, pumpkin, vanilla, honey and pumpkin spice to a food processor or blender and blend until smooth. Add in graham crackers and blend again until graham crackers are broken apart
- Add ice cream to a loaf pan or container and freeze for 2-3** hours until set.
- Serve ice cream, top with additional crushed graham crackers if desired.
