  • Add cottage cheese, pumpkin, vanilla, honey and pumpkin spice to a food processor or blender and blend until smooth. Add in graham crackers and blend again until graham crackers are broken apart
  • Add ice cream to a loaf pan or container and freeze for 2-3** hours until set.
  • Serve ice cream, top with additional crushed graham crackers if desired.

Notes

This makes 3-4 servings of ice cream depending on how much you want to eat.
*I used simple mills sweet thins so I do not chop them, but if you are using full sized graham crackers break them apart.
**If your ice cream comes out frosty let it sit out for 15-20 minutes, this will soften it up.
*** Pumpkin spice is a combination of cinnamon, ginger, all spice, and nut meg. You can sub with a combination of the above or just cinnamon.
