This vegan mediterranean white bean stuffed sweet potato with tahini is a delicious way to enjoy sweet potatoes.
Ingredients
This makes 2-3 servings
Sweet potato
- 1 sweet potato - cut in half longways
Stuffing
- ½ red onion - finely chopped
- 1 bell pepper (any color works) - finely chopped
- 1 bunch of parsley - finely chopped
- 2 garlic cloves - finely chopped
- 1 can white beans
- 1 tsp za'atar
- 1 tsp paprika
- 1 tsp salt
- pepper to taste
Tahini Sauce
- ¼ cup tahini
- ¼ cup water (add more if your tahini is really thick)
- 1 tsp mustard
- 1 tsp maple syrup
- salt/pepper to taste
- juice from ½ lemon
Instructions
- Preheat your oven to 425 degrees.
- Place sweet potatoes face down, on a sheet pan lined with parchment paper. Bake for 30-40 minutes until sweet potatoes are soft.
- Mix together filling ingredients.
- Mix together tahini sauce.
- Pour tahini sauce over filling, and mix again.
- Once sweet potatoes are done cooking, let them cool for 5-10 minutes. Add filling to each sweet potato half and dig in.
