This vegan mediterranean white bean stuffed sweet potato with tahini is a delicious way to enjoy sweet potatoes.

Ingredients

This makes 2-3 servings

Sweet potato

  • 1 sweet potato - cut in half longways

Stuffing

  • 1/2 red onion - finely chopped
  • 1 bell pepper (any color works) - finely chopped
  • 1 bunch of parsley - finely chopped
  • 2 garlic cloves - finely chopped
  • 1 can white beans
  • 1 tsp za'atar
  • 1 tsp paprika
  • 1 tsp salt
  • pepper to taste

Tahini Sauce

  • 1/4 cup tahini
  • 1/4 cup water (add more if your tahini is really thick)
  • 1 tsp mustard
  • 1 tsp maple syrup
  • salt/pepper to taste
  • juice from 1/2 lemon

Instructions

  1. Preheat your oven to 425 degrees.
  2. Place sweet potatoes face down, on a sheet pan lined with parchment paper. Bake for 30-40 minutes until sweet potatoes are soft.
  3. Mix together filling ingredients.
  4. Mix together tahini sauce.
  5. Pour tahini sauce over filling, and mix again.
  6. Once sweet potatoes are done cooking, let them cool for 5-10 minutes. Add filling to each sweet potato half and dig in.
