High Protein Chocolate Greek Yogurt Popsicle

  • Add greek yogurt and protein powder to a bowl and mix until smooth. Add the greek yogurt mixture in a circle shape to a sheet pan or cutting board lined with parchment paper or silicone. Freeze for 1-2 hours until very hard.
  • Add chocolate and coconut oil to a bowl and melt together at 3 30 second intervals in the microwave, stirring each time.
  • Dip/cover popsicle in chocolate. I found the easiest way is to cover one side of the popsicle in chocolate on the sheet pan and then flip and cover again. Top with flaky sea salt if using and freeze again for 15 minutes. Dig in and enjoy.

Notes

This makes 1 popsicle but you could easily break it into two or double the recipe.
