Baked Smashed Honey Mustard Potatoes
Ingredients
- ~12 small potatoes
- 3 tablespoons oil I like avocado
- 2 tablespoons mustard
- 1-2 tablespoons honey
- ½ teaspoon salt
- pinch black pepper
- ½ teaspoon garlic powder
Instructions
- Add potatoes to a pot of boiling water and boil for 20-30 minutes. The potatoes should be fork tender and easily smashed when done.
- Preheat oven to 425 degrees.
- Add oil, mustard and honey to a bowl and mix together until smooth.
- Add potatoes to a sheet pan lined with parchment paper. Coat with the honey mustard mixture, I used a pastry brush to brush on the sauce. Coat potatoes in salt, pepper and garlic powder.
- Bake potatoes for 30-40 minutes, until crisp.
- Serve potatoes with your favorite protein or on their own.
