Salad

  • 2 medium cucumbers - sliced
  • ¼-1/2 block feta - crumbled adjust to the amount of feta you want
  • ½ cup finely chopped scallions
  • 3 tablespoons fresh chopped mint
  • cup chopped pumpkin seeds

Dressing

Instructions
 

  • Add all dressing ingredients to a jar or bowl and mix.
  • Add all salad ingredients to a bowl. Toss together with dressing and enjoy.
