Substitutions
- milk - dairy or vegan milk works here.
- greek yogurt- you can use greek yogurt instead or use coconut yogurt for a vegan option.
- strawberries - I think about ⅓-1/2 a cup of raspberries would work but you would have to play around with the consistency.

The chia seed pudding can be stored in a sealed container or jar in your fridge for up to 3 days.

No, this will mess up the consistency of the chia pudding.
I do not suggest doing this as it will alter the consistency and flavor of the chia pudding. If you must leave out the protein powder then add in an extra tablespoon of chia seeds, 1 tablespoon of sweetener and ½ teaspoon of vanilla.
I like to top my chia pudding with fresh fruit, cacao nibs and bee pollen.
Recipe Pro-Tips
Use a good tasting protein powder for the best tasting chia pudding. My favorite whey proteins are Ballerina Farms and Mindy Body Green. For vegan protein I love Ora Organic or Truvani protein powder.

Chocolate Strawberry Chia Pudding (high protein)
Ingredients
- 5 big juicy strawberries
- ⅔ cup whole milk or milk of choice
- ½ tablespoon cacao powder
- 2 servings chocolate protein powder
- ¼ cup greek or skyr yogurt can use vanilla or plain
- 7 tablespoons chia seeds
optional toppings
- cacao nibs
- ¼-1/2 cup greek or skyr yogurt
- additional chopped strawberries
- pinch bee pollen
Instructions
- Add strawberries, milk, cacao, yogurt and protein powder to a blender or food processor. Blend until smooth.
- Add half of the chia seeds to a jar, bowl or glass along with half of the strawberry mixture. Mix until combined. Repeat with the other half of the chia seeds and strawberry mixture to make the second portion.
- Refrigerate both portions of the pudding for at least 1 hour or overnight.
- Top off chia pudding with yogurt, cacao nibs, strawberries and bee pollen if using.
